BOKA RESTAURANT + BAR at Hotel 1000 Announces New Executive Chef, Peter Birk

Peter Birk takes lead of the culinary team at downtown Seattle’s premier luxury destination


SEATTLE (April 13, 2012) – Hotel 1000, downtown Seattle’s premier luxury destination, announces Peter Birk as executive chef. In his position, Birk will oversee the culinary direction for BOKA RESTAURANT + BAR.

“We are fortunate to welcome Chef Peter Birk to BOKA, given his extensive expertise in the restaurant industry and solid reputation,” said Denny Fitzpatrick, general manager of Hotel 1000. “Our new BOKA menus will showcase Peter’s vision for the restaurant and will continue to incorporate Northwest product. I know Peter will become a strong leader in the kitchen, as well as in the hotel to ensure our ongoing goal to make every guest experience exceptional.”

Birk brings more than 31 years of culinary experience to his position at Hotel 1000. His career began in 1980 when he worked at his family owned business, Spring River Inn in Riverton, Kansas. Over the span of 12 years, he worked his way up the culinary chain, to become co-owner of the restaurant.

Most recently, Birk was the executive chef at Harborside. Prior to Harborside, he held the title of executive chef at Ray’s Boathouse in Seattle for five years after being promoted from chef de cuisine after six years. During his tenure he demonstrated an outstanding level of leadership and creativity in menu development and kitchen management and assisted in the grand opening. Over the duration of his career Birk has traveled extensively studying various cooking techniques and lead culinary teams of well-known restaurants throughout the Pacific Northwest, as well as in Los Angeles, El Segundo, Bozeman and Kansas City.

Birk attended the Western Culinary Institute in Portland and interned. When he is not cooking, he enjoys volunteering his time to annual charitable events for South Seattle Community College, Auction of Washington Wines, FareStart, March of Dimes and Long Live the Kings.
